San Felice’s interest in the Maremma led to its acquisition of Tenuta Perolla, but dates back to the mid-1990s. The estate launched a program to
revitalize the vineyards, which were subordinate to the raising of Chianina cattle.Perolla remains even today one of Italy’s foremost producers of this prestigious breed. The hills around Massa Marittima had been long planted to sangiovese and vermentino, but soils and climate were found to be ideal for other noble varieties, such as cabernet, merlot, and syrah. The soils varied significantly, according to the clay percentage in the sand-silt base, making possible the planting of a wide range of grape varieties.
